RECIPE.
Grab two bowls! One for your greens, one to marinate your diced chicken breast.
On a large cutting board, dice up your chicken breast and drizzle some sesame oil. Add your basic seasonings, a pinch of sea salt, pepper, and garlic powder with hint of lime. Let that sit for a few minutes while you dice up your greens & toppings.
Finely mince your garlic and grate your ginger. —your only using a pinch to saute the chicken most of this is for the dressing that is linked in the later steps :)
Chop up your kale, romaine lettuce and give it a good rinse.
Massage your kale with both hands while using olive oil to soften up the kale and give it some texture.
Dice up all your toppings - peppers, tomatoes, shallots, scallions, mango, red onions.
On a skillet drizzle some olive oil, add a pinch full of that minced garlic and some grated ginger and let that saute for 2 minutes— Add your chicken, and add a tablespoon of soy sauce for extra flavor. Let the chicken grill for about 7-10 minutes.
I added my chicken to broil for 5 minutes because I enjoy a little crisp - but this is optional.
Prepare your dressing — I used this food bloggers recipe because it looked so so good! Sesame Ginger Dressing Recipe - Love and Lemons
Take your chicken out and let it cool while yout put all your greens and toppings together.
Add the chicken to your large salad bowl. I also added some leftover wonton strips from last night’s chinese take out. Add your dressing and voila! so so good !!!
